Recipe Ingredients

  • 2 lbs course or chili grind beef

  • One 2 oz packet of spice mix

  • One can of beef broth or beer

Recipe Directions

Cook meat in skillet until tender. Add 1/2 packet of spice mix as meat is cooking. Stir in well. Transfer to chili pot and add beef broth or beer. Mix in remaining spice mix according to taste and simmer covered for at least 30 minutes. As liquid evaporates add water as needed to completely cover meat. Drain each serving with slotted ladle or spoon. For enhanced flavor, refrigerate overnight and reheat in double boiler before serving. The basic chili produced by the above recipe can be used for taco or burrito filling. The spice mix can be used on grilled hamburgers, potato salad or with sour cream as dip.

Hard Times Serving Suggestions

  • Chili with beans - Cook beans separately (pink, kidney or pinto). For dried beans pick out the “rocks” and soak beans overnight for faster cooking. Rinse canned beans to remove syrup. Serve chili with beans on bottom of bowl topped with grated cheese and onions. DO NOT cook beans in the chili.

  • Chili Mac - A real chili parlor favorite! On a oval platter layer spaghetti, beans, chili, grated cheese and chopped onion. Sprinkle with Hard Times Chili vinegar. For extra heat mix chopped raw jalapeno peppers with onions.
